Lomi Lomi Salmon Salad

Ingredients

2 cups
heirloom tomatoes, diced
1 cup
sweet yellow onion, diced
1/4 cup
green onion, sliced
10 oz
fresh salmon
1 cup
kosher salt
1 tsp
fresh ginger
1 tsp
fresh chili pepper
2 tbsp
rice wine vinegar
1 tbsp
fresh coriander
2 tbsp
olive oil
pepper, to taste

Instructions

  • In a large zip lock bag cover salmon with salt and massage for 1 min. Place in fridge for 8-24 hours. Remove and rinse three times massaging lightly.
  • Dice salmon into 1/4 inch pieces and mix with tomatoes and onions.
  • Place bib lettuce on plate and to with salmon mixture.
  • In a ‎mortar smash ginger, hot peppers, coriander and rice wine vinegar to make a paste add olive oil, season with pepper, drizzle on salad and serve.
