INGREDIENTS
- 2 cups heirloom tomatoes diced
- 1 cup sweet yellow onion diced
- 1/4 cup green onion sliced
- 10 oz fresh salmon
- 1 cup kosher salt
- 1 tsp fresh ginger
- 1 tsp fresh chili pepper
- 2 tbsp rice wine vinegar
- 1 tbsp fresh coriander
- 2 tbsp olive oil
- pepper to taste
METHOD
- In a large zip lock bag cover salmon with salt and massage for 1 min. Place in fridge for 8-24 hours. Remove and rinse three times massaging lightly.
- Dice salmon into 1/4 inch pieces and mix with tomatoes and onions.
- Place bib lettuce on plate and to with salmon mixture.
- In a mortar smash ginger, hot peppers, coriander and rice wine vinegar to make a paste add olive oil, season with pepper, drizzle on salad and serve.
