METHOD
Method:
- Starting with the sauce; add olive oil to a warm pan
- Next shallots, asparagus, capers and chili flakes
- Add lemon zest and juice. Add Caper juice
- Plate on top of fish
- Finish dish with Basil oil
Chef's Tip:
Baking fish creates a delicate taste and works very well with sauce.
