INGREDIENTS
- 1 tomato
- 1 jalapeno
- 1/4 cup cabbage
- 1/4 cup sour cream
- 1 lime
- 1 mango
- 4x4 tortillas
- 2tsp vegetable oil
- pinch salt
- pinch pepper
METHOD
1) In a frying pan on medium heat, add oil until it begins to shimmer.
2) Then add shrimp and cook 1 minute on each side. Add salt and pepper to season.
3) Remove shrimp from pan and cut into ¾” pieces.
4) Dice tomato, slice lime wedges and cut jalapeno into thin medallions.
5)Lay down tortillas and brush with a ½ tsp of lime pickle.
6)Lay down a small amount each of shrimp, sour cream, cabbage, tomato, jalapeno, cilantro and serve with a lime wedge.
