INGREDIENTS
- 1 lb Thin Egg Noodles , Tagliolini or similar
- 2 Lemons Juice
- 3 Sprigs of Thyme picked
- 1 Lemon Zest
- 2 tbsp Mascarpone
- 3 tbsp Padano Grated
- 2 tbsp Olive Oil
- Salt & Pepper to taste
METHOD
- Boil a pot of water and season with salt, throw the pasta in and simmer until done.
- At the same time preheat a sauté pan, in it add some oil and some of the butter, thyme, lemon juice, simmer gently and once the pasta is cooked strain and add it to the pan with the lemon juice.
- Add the mascarpone, some pasta water and simmer gently to create a sauce, remove from heat and start adding the cheese and some butter stirring constantly. Once the sauce looks creamy transfer to a plate and serve with a good grating of lemon zest.
