INGREDIENTS
- 1lb (500g) salmon fillet cut into 4 equal pieces
- 2 cups (500mL) fresh strawberries
- Zest of one lime
- 2 tbsp (30mL) fresh lime juice
- 1/4 cup (60mL) cilantro finely chopped
- 1 large shallot diced
- 2 tsp (10mL) red pepper flakes
METHOD
- Wash the strawberries, drain well and lay out on paper towels or a tea towel to dry. Divide in half.
- Make the salsa. Toss together the zest, fresh lime juice, cilantro, shallot, and red pepper flakes in a large bowl. Gently toss in the strawberries. Set aside.
- Preheat grill on High. Place salmon fillets, skin side down on grill and close the lid. Reduce heat to medium. Grill until the salmon is cooked through, should take between 5-8 minutes depending on the thickness.
- Serve with salsa drizzled over the top.
