Pack your grilled avocado with a gorgeous tomato and corn salsa for a delicious and satisfying meal!

Ingredients

semi-ripe to ripe avocados, sliced in half and seed removed
1 tbsp
vegetable oil
1 tsp
sea salt
1 tsp
fresh cracked black pepper
Salsa
1
roma tomato, cored and diced
2
yellow tomatoes, cored and diced
1
orange tomato, cored and diced
1
green tomato, cored and diced
2 ears
corn
1 tbsp
fresh chopped parsley
1 tbsp
fresh chopped cilantro
1 tsp
sea salt
3/4 tsp
fresh cracked black pepper
1
red chili, minced
Instructions
- Pre-heat BBQ to medium high heat.
- Brush each avocado half with vegetable oil and season with salt and pepper.
- Place cut side down on the BBQ and gently press down to ensure avocados is completely in contact with grill.
- Remove after one minute or until you are satisfied with grill marks, approximately 1-2 minutes.
- Combine all ingredients for salsa in a mixing bowl.
- Fill avocados with salsa and serve.
