INGREDIENTS
- 4 semi-ripe to ripe avocados sliced in half and seed removed
- 1 tbsp vegetable oil
- 1 tsp sea salt
- 1 tsp fresh cracked black pepper
Salsa
- 1 roma tomato cored and diced
- 2 yellow tomatoes cored and diced
- 1 orange tomato cored and diced
- 1 green tomato cored and diced
- 2 ears corn
- 1 tbsp fresh chopped parsley
- 1 tbsp fresh chopped cilantro
- 1 tsp sea salt
- 3/4 tsp fresh cracked black pepper
- 1 red chili minced
METHOD
- Pre-heat BBQ to medium high heat.
- Brush each avocado half with vegetable oil and season with salt and pepper.
- Place cut side down on the BBQ and gently press down to ensure avocados is completely in contact with grill.
- Remove after one minute or until you are satisfied with grill marks, approximately 1-2 minutes.
- Combine all ingredients for salsa in a mixing bowl.
- Fill avocados with salsa and serve.
