INGREDIENTS
- 2 tbsp pine nuts
- 3 cups fresh basil leaves
- 1 large garlic clove
- 1/2 tsp kosher salt
- 1 cup parmigiana
- 1/2 lemon lemon
- 1/2 lemon lemon zest
- salt to taste
- pepper to taste
METHOD
Method
1. Place garlic and Kosher salt in pestle, smash it as hard as you can with mortar, don’t stop until you have made the ultimate flavour paste (taste it, I dare you!). Add pie nuts and smash again.
2. Add some basil and extra virgin olive oil, then add some more!
3. Add parmigiana, lemon juice and zest.
4. Season and taste to test.
