Ingredients
1 head
massaged until desired texture kale
1 can
rinsed + drained organic chickpeas
2
diced avocados
1
whole cucumber, thickly diced
Dressing
1/4 cup
tahini
1/4 cup (plus more for thinning)
water
2 teaspoons
fresh grated garlic
2 tablespoons
nutritional yeast flakes
2 teaspoons
whole grain Dijon mustard
1/4 teaspoon
salt
Croutons
4 slices
gluten free bread
Instructions
- Mix the dressing ingredients in a small bowl, using a fork to blend smooth.
- Add water to thin (1 tablespoon at a time), as needed. Taste for salt and seasoning.
- In a large bowl, toss the greens with the dressing.
- Add the avocado, cucumber and chickpeas. Serve with black pepper sprinkled on top.
