INGREDIENTS
- 1 head massaged until desired texture kale
- 1 can rinsed + drained organic chickpeas
- 2 diced avocados
- 1 whole cucumber thickly diced
Dressing
- 1/4 cup tahini
- 1/4 cup (plus more for thinning) water
- 2 teaspoons fresh grated garlic
- 2 tablespoons nutritional yeast flakes
- 2 teaspoons whole grain Dijon mustard
- 1/4 teaspoon salt
Croutons
- 4 slices gluten free bread
METHOD
- Mix the dressing ingredients in a small bowl, using a fork to blend smooth.
- Add water to thin (1 tablespoon at a time), as needed. Taste for salt and seasoning.
- In a large bowl, toss the greens with the dressing.
- Add the avocado, cucumber and chickpeas. Serve with black pepper sprinkled on top.
