METHOD

  1. Mix the dressing ingredients in a small bowl, using a fork to blend smooth.
  2. Add water to thin (1 tablespoon at a time), as needed. Taste for salt and seasoning.
  3. In a large bowl, toss the greens with the dressing.
  4. Add the avocado, cucumber and chickpeas. Serve with black pepper sprinkled on top.
