Crunchy brussels sprouts and chicken stir-fry

Ingredients

3 cups
Brussels sprouts, cut in half
2 tbsp
extra-virgin olive oil
1/2
roughly chopped white onion
2
chicken breasts, cut in 1 inch cubes
1
red pepper, cut in thin slices
1
zucchini, cut in 2 inch cubes
2
celery, roughly chopped
1 tsp
oregano
1 tsp
chili flakes
1 tsp
red chili powder
Pinch
Salt and pepper

Instructions

1. In a pot, steam or boil the Brussels sprouts until tender but not soft, do not overcook (place on high heat and cook 5 minutes). 2. In a separate skillet, heat oil over medium heat, add onions cooking for approximately 1-2 minutes. 3. Add chicken cubes to skillet and cook until browned. 4. Add red pepper, zucchini, celery, oregano and chili flakes, sauté for 2 minutes. 5. Add the Brussels sprouts and red chili powder; let it cook for additional 2 min, stirring occasionally. 6. Top with salt and pepper to taste and enjoy!
