INGREDIENTS
- 4 Salmon filets skin on
- 4 cups blanched soba noodles
- 1 head broccoli sliced
- 1 tbsp diced ginger
- 1 tbsp diced fermented black bean
- 1 tbsp chopped chilli
- ½ cup white wine
- 1 tbsp soya sauce
- ½ lemon juice and zest
- 1 tbsp sliced green onion
- splash olive oil
- nub butter
- pinch of salt
- pinch of pepper
- sliced nori for garnish
METHOD
Special tools cast iron pan
1. Season salmon with salt and pepper. In a medium heat cast iron pan add olive oil and butter.
2. Place salmon skin aid down and cook from bottom up. Should take 7-9 min. Remove pan from heat and let rest.
3. Heat olive oil, in a large medium heat pan. Sauté garlic, chilli, ginger and black bean.
4. Add broccoli and caramelize, deglaze with white wine, soya sauce, lemon juice and zest.
5. Add soba noodles and warm through, finish with green onion.
6. Divide by ¼ and plate in large bowl. Place salmon skin side up to show off crispy skin and
garnish with sliced nori!
