Cold soba noodle salad with miso dressing

Ingredients
1/2 lb
soba noodles
1 3/4 cups
each cut into 3 pieces snow peas
3
thinly julienned Lebanese cucumbers
2
thinly julienned carrots
2
thinly sliced green onions
Dressing
3 tbsp
olive oil
2 tbsp
soy sauce
2 tbsp
rice vinegar
1 tbsp
miso paste
1
finely chopped garlic clove
Instructions
Dressing
1 In a large bowl, whisk together all the ingredients. Season with salt and pepper. Set aside.
Salad
2 In a pot of salted boiling water, cook the noodles for 5 minutes. Add the snow peas and continue cooking for 2 minutes. Drain and rinse under cold running water. Let cool.
3 Add the noodles and snow peas to the dressing along with the remaining ingredients. Adjust the seasoning.
Note: Miso is a protein-rich fermented paste made from soybeans, grain (barley or rice), salt and water. It can be used in many preparations: soups, dressings, marinades, etc. It can be found in most grocery stores or Asian markets. It keeps in the refrigerator for 2 years.
