INGREDIENTS
- 2 lb large diced leg of lamb
- 2 small carrots diced
- 2 small parsnips diced
- 12 cloves garlic
- 12 pearl onions peeled
- 2 celery stalks small dice
- 2 tsp flour
- 2 tbsp olive oil
- 1/2 pint Guinness
- 1/2 can cola
- 750-mL beef stock
- fresh thyme
- salt and pepper
METHOD
Toss large diced lamb with flour, salt and pepper. In a hot pan sear with olive oil until browned. Add all veggies and sweat. Deglaze with Guinness then cola, reduce by half and top with stock.
Simmer on low roll for 1.5 – 2 hours, adjust seasoning and serve.
Garnish with the traditional Irish champ mashed potato and crispy parsnips!
