Ingredients
250g
soba noodles
1
large seedless cucumber, grated or spiralized
2
medium carrots, grated
1 cup
shelled edamame
2
green onions, thinly sliced
2 cups
rotisserie chicken, (you can also use cooked shrimp or tofu)
Sesame dressing
5 tsp
soy sauce
3 tsp
white wine vinegar
2 tsp
honey
1 tbsp
tahini
2 tsp
sesame oil
1/4 cup
cold water
Instructions
- Cook soba in boiling salted water according to package directions. Drain and rinse with cold water until completely cool.
- Whisk dressing together in a large bowl. Add cucumber and soba and toss well but gently. Divide between 4 bowls. Add garnishes as desired.
