INGREDIENTS
- 250g soba noodles
- 1 large seedless cucumber grated or spiralized
- 2 medium carrots grated
- 1 cup shelled edamame
- 2 green onions thinly sliced
- 2 cups rotisserie chicken (you can also use cooked shrimp or tofu)
Sesame dressing
- 5 tsp soy sauce
- 3 tsp white wine vinegar
- 2 tsp honey
- 1 tbsp tahini
- 2 tsp sesame oil
- 1/4 cup cold water
METHOD
- Cook soba in boiling salted water according to package directions. Drain and rinse with cold water until completely cool.
- Whisk dressing together in a large bowl. Add cucumber and soba and toss well but gently. Divide between 4 bowls. Add garnishes as desired.
