Classic Chicken Tinga

Ingredients

chicken breast

tomatoes

teaspoon tomato paste

large white onion, sliced

cloves garlic, finely sliced

tablespoon chipotle, in adobo sauce
¾
teaspoon oregano
1
cup chicken broth
2
tablespoon cooking oil
to taste
salt
to taste
pepper

Instructions

  1. In a medium sized pot add chicken and cover just barely with water. 
  2. Bring water to a boil and then reduce to a simmer until chicken is cooked through. 
  3. Remove chicken and save stock. 
  4. Pull chicken into bite sized pieces. 
  5. Add tomatoes, chipotle and oregano into a blender and blend until smooth. 
  6. In a saute pan add oil and cook onions until translucent then add garlic and cook for a couple more minutes.
  7. Pour in tomato sauce and bring to a boil then simmer. 
  8. Add shredded chicken, cover and allow to simmer for 15 minutes before serving.
