Cheese Soufflé

Ingredients

2 1/2 tbsp
butter
2 1/2 tbsp
flour
1 cup
milk
100 grams
grated Gruyere
4
eggs, separated
1/2 tsp
Dijon
Lots of
chives
1/2 tbsp
crème du tartar
Salt & Pepper

Ramekin

1 nub
butter
2 tbsp
parmigiana, micro planed

Instructions

  1. Preheat oven to 400F.
  2. Melt butter in a medium pot, add flour and cook for 1 minute. Add milk slowly and stir out the lumps.
  3. Kill the heat, add Gruyère, chives, Dijon and eggs. Over season this mixture, it is 50% of the mass but 100% of the flavour.
  4. Whisk egg whites to a stiff peak and add 1/3 at a time to the flavour batter.
  5. Rub the butter in a ramekin and add parmigiana.
  6. Softly add soufflé mixture and bake in a water bath for 20 minutes or until golden.
  7. Serve with a massive smile!
