INGREDIENTS
- 1 lb extra lean ground beef
- 1 large diced onion
- 12 minced cloves garlic
- 227 g diced cremini mushrooms
- 2 cans 796 ml/28 oz San Marzano tomatoes
- 2 cans rinsed and drained lentils
- 2 tsp cracked pepper
- 1/4 tsp iodized salt
- 1 Tbsp dried oregano
- 1/4 cup + 2 Tbsp pesto or frozen basil
METHOD
- In a large pot over medium high heat, brown the beef.
- Add onion, garlic and mushrooms and sauté until the onion is soft.
- Add tomatoes, lentils, pepper, salt and oregano.
- Bring to a medium bowl, cover, reduce the heat, and simmer for 30 minutes, stirring occasionally. Remove lid and keep simmering for extra 15 minutes.
