Baked falafel balls

Delightful baked falafel balls to serve at your next house party.

Ingredients

1 15-oz can
chickpeas, well drained and rinsed
1
red onion, finely chopped
1/4 cup
whole wheat breadcrumbs
3 tbsp
fresh parsley, finely chopped
2
cloves of garlic, crushed
1 tsp
cumin
1/2 tsp
baking powder
1/4 tsp
lemon juice
1/8 tsp
paprika

Instructions

  • Preheat oven to 375F.
  • Place all ingredients in a food processor and pulse.
  • Add baking powder and mix.
  • Place parchment paper on a baking tray. Form 20 balls.
  • Bake for 15 minutes. Remove from oven, and carefully turn each ball over. Return to the oven and bake for an additional 10 – 15 minutes, until golden brown and slightly crispy. Allow to cool for 5 minutes.
