The one and only Chef Massimo Carpa shares his baked calzone “Napoletano” recipe. Enjoy a classic calzone dish!
“Beautiful calzone!”
INGREDIENTS
- 3 oz Tomato Sauce (for Pizza)
- 3 oz Ricotta
- 3 oz Mozzarella
- 2 tbsp Grated Parmigiano
- 3 oz shredded Salame
- 5 Basil leaves
- 1/2 tsp Oregano
- 2 tbsp Extra Virgin Olive oil
- Salt & Pepper to taste
METHOD
- Stretch the dough to about 10-inch round.
- Spread the ricotta on half of the circle, make sure to leave a couple of inches of clean rim.
- Top the ricotta with the mozzarella.
- add the salame and the basil.
- Fold the other side of the dough over the ingredients and seal the package well.
- Spread the tomato sauce over it and sprinkle some parmigiano, olive oil and oregano.
- Bake in a well preheated oven (500f) until golden.
