INGREDIENTS
- 1/3 cup + 1 tsp extra virgin olive oil divided
- 1 large onion sliced
- 2 tsp fresh garlic crushed
- 1 tsp Italian seasoning
- 1 package frozen pastry sheets thawed
- 1 tsp chili flakes optional
- 6 cremini mushrooms chopped
- 1/4 cup light feta cheese crumbled
- 1 small zucchini thinly sliced
- 1 Spartan apple thinly sliced
- 1/2 cup grated Parmesan cheese
METHOD
- Preheat oven to 400F.
- Heat 1 tsp olive oil in a large nonstick fry pan at medium-low. Stir occasionally until limp and caramelized (for this pizza we need them sweet). Set aside to cool.
- Add garlic and Italian seasoning to remaining oil. Stir and let stand.
- Unroll dough and place on a small cookie sheet with sides lined with parchment paper. Brush top of crust with spiced oil using a pastry brush. Sprinkle with chili flakes. Layer with caramelized onions, mushrooms, feta cheese, zucchini, apple and Parmesan cheese. Bake in preheated oven for 20-25 minutes or until crust is golden brown and tart has puffed up.
