Taro tapioca dessert

  1. Rinse tapioca pearls in warm water. In small pot, bring water to a boil. Once boiling, add tapioca pearls and immediately bring temperature down to a simmer. Allow tapioca to cook under simmer, stirring intermittently with spoon. Cool until translucent, remove from heat and rinse in cold water. Put off to side.
  2. Peel and dice taro into ½ inch cubes. Heat pot on medium heat, add coconut milk to pot. Once coconut milk is simmering, add cubed taro. Add water and honey to pot, stir thoroughly. Allow to slow simmer for 20 minutes or until taro is soft in texture.
  3. Add in tapioca. Let simmer for 5 minutes on low heat, take off heat.
