INGREDIENTS
- 2 10-inch pie crusts (unbaked)
- 1 1/2 cups sugar
- 1/3 cup all-purpose flour
- 1/4 tsp ground ginger
- 1 tbsp lemon zest
- 1 tbsp lemon juice
- 1/2 cup fresh basil roughly chopped
- 4 cups fresh local strawberries large diced
METHOD
Method:
- Line the bottom of a pie pan with one of the pie crusts.
- In a large bowl mix the sugar, flour, cinnamon, lemon zest & juice, fresh basil, and fresh cut strawberries. Pour the mixture into the crust lined pie pan.
- Then cut the remaining pie crust into ¾ inch strips. Create a lattice over the filling. Using a fork crimp the edges and bake in a 425-degree pre heated oven for 35 to 45 minutes.
- Once cooked remove from the oven and rest on a wire rack to cool. Serve while still slightly warm.
