INGREDIENTS
- 1 pint diced strawberries
- 1/2 pint raspberries
- 1/2 pint cut in half blackberries
- 1/2 blueberries
- 1 tbsp sugar
- 1 tbsp honey
- 1 juice and zest lemon
- 1 juice and zest orange
- mint
- 4 slices cubed lemon pound cake
- 4 meringue
- 2 cups whipped cream
METHOD
Place all berries in a bowl, sprinkle some sugar and honey over them, add the lemon and orange zest and juice along with hand thorn mint, marinate for at least 20 minutes.
Place the cubed pound cake in a bowl, top with the berries and whipped cream, add crumbled meringue and enjoy.
