Lemon tart in a jar

Ingredients

large egg yolks
1/2
cup sugar
2
lemons, juiced
3
tablespoons butter
1
pinch salt

Crumble

1/2
cup graham cracker, crumbs
3
tablespoons sugar
2
tablespoons butter
1
pinch cinnamon

Garnish

1
cup whipped cream
4
raspberries
4
mint leaves

Instructions

  1. Place egg yolks and sugar in a glass bowl over a pot of simmering water (double boiler) Whisk for 4 minutes until thickened.
  2. Add lemon juice and continue for 5 minutes.
  3. Add butter removal from heat and whisk until smooth.
  4. Season with a pinch of salt.
  5. Cover and chill.
Crumble
  1. In a non-stick pan over low heat toss all ingredients until golden brown.
  2. Remove and let cool.
Build
  1. Place a large tablespoon of crumble at the bottom of the jar.
  2. Top with 2 large tablespoons of lemon Curd, garnish with whipped cream, raspberry and mint
