Ingredients

millilitres (2 cups) All-purpose flour

millilitres (1/2 tsp) Baking powder

millilitres (1/2 tsp) Baking soda

pinch Salt

large Eggs

millilitres (2 1/2 cups) Granulated sugar

millilitres (1 1/2 cups) Extra virgin olive oil

millilitres (1 1/2 cups) Milk

Lemons, zest
Icing sugar, for dusting

Instructions

  1. Preheat the oven to 350 °F.
  2. Grease a 9-inch cake pan with cooking spray.
  3. In a large bowl, sift together the flour, baking powder, baking soda, and salt.
  4. In another large bowl, whisk together the eggs, sugar, olive oil, milk, and lemon zest.
  5. Add the wet ingredients to the dry ingredients. Mix until well combined.
  6. Transfer the mixture to the prepared cake pan and bake, on the middle rack, for 90 minutes or until a toothpick comes out clean.
  7. Invert the cake onto a cooling rack. Allow the cake to cool completely.
  8. Dust the cake lightly with powdered sugar and serve.
