Kale + apple cake
Apple flavored cake mixed with kale and topped with zesty apple icing sauce

Ingredients
1 cup
frozen chopped kale
1/2 cup
unsweetened applesauce
2
apples, peeled & cut into dime pieces
2 tsp
vanilla
3
eggs
1/2 cup
melted butter
3/4 cup
brown sugar
2 tsp
baking powder
1 tsp
salt
2 cups
all purpose flour
Applesauce icing
2 tbsp
applesauce
1 tbsp
honey
2 tbsp
melted butter
1 1/2 cup -2 cups
icing sugar, to desired consistency
Instructions
1)Preheat oven to 350°
2)Pulse thawed kale, apples and applesauce in a food processor until it forms a paste. Empty into a mixing bowl.
3)Add eggs, sugar, vanilla and melted butter into the bowl and mix thoroughly.
4)Sift together then incorporate dry ingredients.
5)Pour the mixture into two greased cake pans or one bundt pan & bake for approximately 30 minutes or until a toothpick inserted comes out clean.
Apple Sauce Icing
1)Mix all ingredients together.
2)Dizzle over cooked cake.
