INGREDIENTS
- 1.25 cups room temp Unsalted butter
- 1 cup Icing sugar
- 1 teaspoon Vanilla extract
- 3 cups All-purpose flour
- 1 teaspoon Kosher salt
- 1 cup Dulce de Leche
METHOD
- In a stand mixer, cream butter and vanilla. Add sugar and kosher salt, then slowly add flour. Scrape down the bowl halfway through.
- Wrap dough in plastic wrap to make a long log. About the size of a Loonie, chill for an hour. Cut into coins about 5/8th of an inch.
- Bake at 350 on parchment paper until the first sight of tanning.
- Remove let cool, add a teaspoon of dulce de leche to the bottom, and make a perfect sandwich.
