A fruitful apple tarte tatin

Ingredients
4
Spy or granny smith apples, peeled and sliced
1
sheet puff pastry
4 tbs
sugar
4 tbs
butter
2 tbs
wild flower honey
1
sprig thyme
sugar for dusting
blow torch, (optional)
Instructions
Utilities: 6 inch pans for baking
1) Cut puff into 6” rounds with a cookie cutter or to desired size of your pans.
2) Peel apples, and cut into large wedges.
3) Heat pans, equally distribute butter.
4) Toss apples in sugar and arrange in the pans.
5) Top with puff pastry and bake 30-45 minutes in a convection oven at 400F
6) Let cool for a few minutes top with ice cream and wild flower honey.
7) Garnish with torched apple.
