Fresh homemade peach cobbler

Ingredients

8 - 10 medium
peaches, cut into wedges
¼ tsp
almond extract
2 tbsp
sugar
1 tbsp
cornstarch

Cobbler Topping

1 ½ cups
all-purpose flour
¼ cup
sugar
1 tbsp
baking powder
½ tsp
salt
½ to ⅔ cup
whipping cream

Instructions

  1. Preheat the oven to 375F. Place the peaches in a medium baking dish and sprinkle with almond extract (if using). 
  2. Sprinkle with sugar, then cornstarch and toss well to coat.
  3. To make the topping, stir the flour, sugar, baking powder and sit together in a medium bowl. 
  4. Stir in ½ cup of the cream, adding more if needed to create a soft dough that drops from a spoon. 
  5. Drop big spoonfuls evenly over the top of the peaches. 
  6. Place the baking dish on a baking sheet and bake for about 45 min or until the fruit is bubbly and the topping is golden. Serve warm.
