Easy no-bake peach cheesecake

Chef Claire Tansey is peachy-keen over this delicious, vanilla-peach cheesecake.

INGREDIENTS

METHOD

  1. Place cookies in a zip-lock back and smash into large crumbs using a rolling pin.
  2. Beat cream cheese with sugar in a medium bowl, using an electric mixer, until smooth and fluffy, 1 to 2 min. Beat in sour cream and vanilla.
  3. Divide cream cheese mixture among 4 small parfait cups. Top with cookie crumbs. Top with peaches. Cover and chill at least 3 and as much as 12 hours.

 

Peeling Peaches

To peel peaches, boil a large pot of water and prepare an ice bath. Cut a small X into the base of each peach. Drop into the boiling water for 30 sec, then immediately transfer to the ice bath. Once peaches are cool, drain them and the skin will peel right off.
