Chef Stefano Faita’s simple recipe for citrus carpaccio with infused honey is perfect for your next summer gathering. With a vanilla cinnamon infused honey, you’ll be wanting more with every bite! You can also get creative and make this dish into a savoury appetizer or entree by adding red onion, black olives, olive oil, and basil to balance the sweetness of the citrus and honey.
INGREDIENTS
- 2-3 large oranges
- 1/2 cup honey
- 1/2 vanilla bean
- 1 cinnamon stick
- 1 tsp fennel seed
- 2 tbsp chopped pistachio (for garnish)
- Mint leaves (for garnish)
METHOD
- Peel oranges. Cut into crosswise slices and remove any seeds. Set aside.
- Add honey, cinnamon stick, vanilla bean, and fennel seeds to a small saucepan over low heat. Heat until honey is thin, syrupy, and fragrant, about 5 minutes.
- Meanwhile, arrange orange slices on a platter. Drizzle with honey syrup. Garnish with pistachios and mint.
