INGREDIENTS
- 1 lb. Mascarpone cheese
- 5 oz. sugar
- 5 egg yolks
- 5 oz. chestnut purée
- 1 oz. rum
- 5 oz. candied chestnut pieces if available
- 2 oz. chocolate chips
- cocoa powder to sprinkle over the finished product
- 8 ladyfingers
- 1 cup coffee (preferably Espresso)
- enough to taste Optional liquor to add to coffee (Rum, Marsala, Kahlua)
METHOD
- In a mixer bowl, add the sugar and the eggs, whip until creamy and stiff, add the chestnut puree and mix gently then add the rum and the mascarpone, whip well until lightly stiff.
- Dip the ladyfingers into the coffee and place in a glass, add the mascarpone mix to the top and sprinkle the cocoa powder on it, refrigerate until needed.
