INGREDIENTS
- 2 Cup Oats crushed into a flour
- 2 cups pumpkin puree
- 1 banana mashed
- 1 egg
- 1/4 cup coconut oil
- 1/4 cup honey
- 1/2 cup water
Frosting
- 1 cup smooth peanut butter
- 225g cream cheese
METHOD
- Preheat oven to 350F and lightly grease each cavity of cupcake tin.
- Whisk together the pumpkin banana egg coconut oil honey and water.
- When smooth add in the oat flour.
- Mix together and divide into cupcake cavities
- Bake for 13 to 15 minutes for small cupcakes and 18 to 20 for standard.
- Remove from oven and cool
- In the stand mixer, combine Peanut Butter and Cream
- Mix until a fluffy frosting forms.
- Pop into a piping bag and pipe onto cooled pup cakes.
