BBQ peach bread pudding with lemon whipped cream

Ingredients

1 16oz
loaf French bread, torn into 1” pieces
2 cups
fresh peaches
½ cup
brown sugar
¼ cup
white sugar
1 tbsp
flour
½ tsp
nutmeg
½ tsp
cinnamon
⅛ tsp
allspice
1 tsp
orange zest
2 tsp
vanilla extract
¾ tsp
kosher salt

Lemon whipped cream

1 cup
whipped cream
1 tsp
lemon zest
½ cup
wild mint

Instructions

  1. Pre-heat BBQ to 350F. Toss bread and peaches together and add to baking pan. 
  2. In a large bowl combine eggs, sugar, flour, nutmeg, cinnamon, all spice, orange zest, vanilla and salt, whisk. 
  3. Pour mixture over bread and peaches and allow to soak for 15 minutes. 
  4. Bake for approximately one hour, until a knife inserted comes out clean. 
  5. Fold lemon zest into whipped cream and top bread pudding with cream and mint.
