This edamame guacamole is rich and creamy. Serve with crackers and fresh cut veggies for a healthy afternoon snack.

Ingredients

avocados

lime, juiced
1 cup (250 mL)
shelled edamame, cooked and mashed
1/2
medium onion, diced
1 tbsp (15 mL)
chopped cilantro
1/2 tsp (2 mL)
salt
Instructions
- In a medium bowl, roughly mash the avocados with a fork. Mix in the lime juice and edamame. Then stir in the onion, cilantro and salt. Taste and add more salt or cilantro, depending on personal preference.
- Cover with plastic wrap, pressing down against the guacamole, and refrigerate for an hour.
