Pineapple Mezcal Sour

Ingredients
1.5 oz.
Mezcal
2 oz.
fresh lime juice
1 oz.
fresh pineapple juice
1 tsp.
Simply syrup
1
egg white
Angostura bitters
edible flowers, for garnish (optional)
Simple Syrup
1 cup
Granulated sugar
1 cup
water
Instructions
Method:
- Add mezcal, lime juice, pineapple juice, simple syrup and egg whites to a cocktail shaker or mason jar. Shake until frothy. Fill the shaker or jar with ice and continue to shake until nicely chilled.
- Pour cocktail into a coupe (or any cocktail glass you like) and top with a few drops of bitters. For a professional finish, drag a toothpick through the bitters to create a swishy pattern and garnish with edible flowers. Enjoy!
- Add sugar and water to a small saucepan and bring to a simmer. Stir until all the sugar has dissolved. Remove from heat and let cool completely. Store in a mason jar in the fridge for up to 3 weeks.
