INGREDIENTS
- 1 tsp canola oil
- 3/4 cup diced zucchini
- 2 cups grape tomatoes cut in half
- 1 1/2 cups unsalted black beans rinsed and drained
- 3 eggs
- 2 oz. grated old cheddar cheese
- 2 Tbsp finely chopped green onion
METHOD
- In a medium frying pan over medium heat add the oil. Toss in zucchini and sauté for 1-2 minutes. Add tomatoes and sauté for another minute. Stir in black beans.
- Using a wooden spoon of a heat safe spatula make 2 holes in the vegetables/bean mixture and then crack an egg into each hole or opening.
- Cover the pan with a lid and cook the egg until your desired yolk doneness. Remove from the heat, sprinkle equally with the cheese and the green onion, cover and let the cheese melt.
- To serve – divide it in half and gently lift up the egg and the vegetable/bean mixture and place in a shallow bowl or a plate. Add hot sauce if desired.
