INGREDIENTS
- 8 slices whole wheat bread
- cooking spray
- 1 package or 14 slices fully cooked bacon
- 2 cups swiss cheese or cheddar
- 4 green onions
- 1/4 green pepper
- 6 eggs
- 1/2 tsp fresh pepper to taste
- 2 tsp Worcestershire sauce
- 3 cups 1% milk
- 1/2 tsp chili flakes optional
- 1 tsp dry mustard
- 3 tbsp melted butter
- 2 cups Special K cereal
- 1 tbsp sesame seeds optional
METHOD
The night before:
- Stack 8 slices of whole wheat bread and slice off crusts.
- Spray a 9 x 13 pan with cooking spray and line the bottom of the pan with bread. Squish them together so they fit.
- Cover bread with pre-cooked bacon.
- Grate cheese directly over top.
- Finely chop green onion; sprinkle over top.
- Finely chop green pepper; sprinkle over top.
- Combine the following ingredients in a medium-sized mixing bowl: well beaten eggs, pepper, Worcestershire sauce, milk, chili flakes and dry mustard.
- Pour this mixture over top of the bread and layers.
- Cover and leave in fridge overnight.
In the morning:
- Preheat oven to 350F.
- Melt butter in a medium-sized microwave safe bowl. Add cereal and any seeds you may enjoy to the melted butter. Toss to completely coat. Sprinkle evenly over egg mixture.
- Bake in hot oven uncovered one hour or until knife comes out clean.
