INGREDIENTS
- 2 eggs
- 1 ripe banana
- 2 tablespoons sugar
- 1 tablespoon peanut butter
- 1 1/2 cup self rising flour
- 1 teaspoon baking powder
- 1/2 lime juiced
- 1 cup milk
Garnish
- 1/4 cup chopped milk chocolate
- 1/4 roasted peanuts
- maple syrup
- butter
METHOD
- Add banana, peanut butter, eggs, milk, sugar, into Vitamix. Blend till smooth.
- Add lime juice and gently sift in flour and baking powder.
- Bring fry pan to medium low heat and grease lightly with butter and place in pancake batter to 3 inch disks.
- Stack on a plate garnish with chopped chocolate, butter and maple syrup!
