The perfect potato rosti
The perfect side dish for your dinner by the campfire.

Ingredients

medium Yukon gold potatoes, grated
3
sliced scallions
salt and pepper
3 tbsp
extra virgin olive oil
Instructions
- Toss all ingredients into a bowl and mix together
- Place cast iron pan on top of coals of a campfire
- Wait until pan is at high heat almost smoking
- Add mixture and spread out eventually
- Cook for 4 minutes or until golden and flip
- Return to heat and cook until soft
- Remove from heat and serve
- Garnish with sour cream and chopped chives
