INGREDIENTS
- 4 slices thick sourdough
- 2 tbsp softened butter
- 2 tbsp whole grain dijon mustard
- 1/2 cup mornay sauce
- 6 pcs thinly sliced ham
- 1.5 cups shredded gruyere divided
Eggs
- 1 tbsp butter
- 2 large eggs
- kosher salt
- freshly ground black pepper
- chopped chives
Mornay Sauce
- 1 tbsp butter
- 1 tbsp all-purpose flour
- 2/3 cup room temperature whole milk
- 1/4 tbsp pinch kosher salt
- 1/4 tbsp freshly ground black pepper
- 1/4 cup shredded gruyere
Mimosas
- 1 bottle cava
- 1 cup freshly squeezed orange juice
METHOD
Mornay
- In a small pot softly melt butter with flour, slowly add milk and whisk. Season and add grated gruyere.
Sandwich
- Butter both sides of bread. In a large skillet toast both sides.
- Glaze inside with mustard, cheese and ham, bring the sides together for a perfect Croque Monsieur.
- Top with a sunny side up egg.
Mimosas
- Mix cava, orange juice and champagne.
