Banana flour is found in most health food stores and is made from unripe green bananas. This flour is gluten and nut free and offers a variety of health benefits including balancing blood sugars, being high in fiber and containing zinc, vitamin E and magnesium.
When you first open banana flour – it has a grayish color. Not to worry…. once you bake with it, the colour changes to a creamy brown.
Ingredients
1 cup
banana flour
1/2 tsp
baking soda
1/4 tsp
kosher salt
1 stick
at room temperature butter
3/4 cup
coconut sugar
1 large
organic egg
1 tsp
vanilla extract
1 cup
semisweet chocolate chips
Instructions
1. Preheat oven to 350 degrees F. In a small bowl, whisk together banana flour and baking soda.
2. Using a hand mixer and cream butter and sugars together until fluffy. Add egg and mix until completely mixed in. Add vanilla and chocolate chips, and mix until just combined.
3. Using a tablespoon and place 12 to 13 cookies on a cookie sheet lined in parchment paper, spaced about 2 inches apart.
4. Bake for 7 to 8 minutes.
5. Cool and enjoy!
