Asparagus, tomato and feta frittata

Ingredients
1 tbsp
olive oil
1/2 cup trimmed and cut into 1-inch pieces
trimmed asparagus, cut into 1-inch pieces
1
chopped green onion
2
large, organic eggs
2
egg whites
1/4 cup
skim milk
1 oz
crumbled feta cheese
Pinch
Salt and pepper
Instructions
1. Preheat oven to 450 F.
2. Whisk together eggs, egg whites, milk and feta cheese. Season with salt and pepper.
3. In skillet over medium heat, add the green onions and asparagus and saute 2-3 minutes.
4. Add tomato and cook for an additional minute or until softened.
5. Pour the egg mixture into skillet and cook until the eggs begin to set (3-5 minutes. Don’t burn).
6. Sprinkle with more cheese if desired and place in oven to bake for 8-12 minutes or until eggs are cooked through.
