Ingredients

3 medium
zucchini, split
3
zucchini blossoms, (zucchini flower)
½ box
medium shell pasta, cooked to the bit
1 cup
feta, crumbled
½ cup
mint leaves
1 lime
juiced and zest
¼ cup
extra virgin olive oil
Kosher salt and pepper

Instructions

  1. Rub zucchini with olive oil, salt and pepper. Grill or sear at high heat. 
  2. Remove and slice. 
  3. In a large bowl toss pasta, zucchini, olive oil, feta, mint and citrus. 
  4. Season with salt and pepper and garnish with zucchini blossoms.
