INGREDIENTS
- 3 medium zucchini split
- 3 zucchini blossoms (zucchini flower)
- ½ box medium shell pasta cooked to the bit
- 1 cup feta crumbled
- ½ cup mint leaves
- 1 lime juiced and zest
- ¼ cup extra virgin olive oil
- Kosher salt and pepper
METHOD
- Rub zucchini with olive oil, salt and pepper. Grill or sear at high heat.
- Remove and slice.
- In a large bowl toss pasta, zucchini, olive oil, feta, mint and citrus.
- Season with salt and pepper and garnish with zucchini blossoms.
