INGREDIENTS
- 1/4 seedless watermelon
- 1 head Boston bib lettuce
- 1 bunch mint torn
- 2 cups feta cheese crumbled
- salt
- ground black pepper
- splash aged balsamic
METHOD
Cube watermelon into 1 inch squares, lay Boston bib down on a platter. Top with watermelon, mint and feta. Season with salt, heavy pepper and balsamic. Serve with a smile!
