Tropical baja nachos

These tropical flavoured nachos will take your taste-buds to an island getaway!

METHOD

  1. Cook fish filets as per instructions
  2. Once fish is cooked, cut into small pieces
  3. Lay nacho chips on a baking tray and heat until warm in the oven
  4. Chop mango and red peppers into small pieces and mix in a bowl. Set aside
  5. Finely chip cilantro
  6. Mix 1 cup cabbage with 1/2 sour cream and squeeze 1/2 lime
  7. Slice avocado into small chunks
  8. Remove nacho chips from oven and sprinkle all topping
